Spicy Chorizo and Chicken Quesadillas
Chorizo and chicken in cheesy tortillas. Cook chorizo and chicken with onions, peppers, chopped chillies add mushrooms for more body. Place grated cheese on one half of a tortilla, add a spoonful of the chicken mix, more cheese on top (chilli cheese is good) and fold the tortilla into a semi circle. Place on a plate and repeat. Fry the quesadillas 2 at a time in a large dry frying pan, the first couple will take longer but as the pan heat up you'll get quicker. Flip the tortillas over mid way to brown both sides. Cut each Quesadilla in half and serve with sauce, salsa or your favourite pickles.
