A simplified, family-friendly take on Jordanian mansaf. Tender beef simmered with onion, garlic, cumin, and stock, served over rice and finished with a cool spoon of Greek yogurt. Warming, savoury, and comforting without being complicated.

Instructions
  • Fry chopped onion in olive oil until soft, then add garlic and cumin and cook briefly

  • Add diced sirloin steak and brown on all sides

  • Pour in beef stock, reduce heat, and simmer 20–25 minutes until tender

  • Cook rice separately according to packet instructions

  • Stir a little hot stock into the yogurt to loosen it

  • Serve beef and sauce over rice, topped with yogurt
